Open Face Blueberry Pie

- your favorite 8-9" pie crust,

- blueberry filling:
- 1/2 cup fruit-sweet blueberry or
boysenberry syrup
- 3 Tablespoons cornstarch
- 3 Tablespoons water
- 3/4 teaspoon cinnamon
- 4 cups rinsed and drained blueberries
(or blackberries, marionberries, boysenberries)
- 1-2 packets Equal® (NutraSweet®
as sweet as 2 teaspoons sugar each) optional
instructions:
- Preheat oven to 450 degrees.
Stir cornstarch into water until dissolved. Mix in berry syrup and
cinnamon, and let sit at least 15 minutes. Then fold in rinsed,
drained berries.
Spoon berry mixture into an unbaked pie crust. Bake at 425 degrees
for 20 minutes, protecting crust edges with aluminum foil after
the first 10 minutes. Reduce heat to 350 degrees, and bake for 20
to 30 minutes longer.
If the berries are too tart, sprinkle with 1-2 packets
Equal®.
